It would appear you need Vista Business or Vista Ultimate to downgrade. And you can downgrade to Windows 2000 if you want. You will also need a Windows XP key. My understanding is that you can use an existing one, as you will be changing it to the Vista keys when you activate. You will need to activate by phone, and speak to a rep to explain you are downgrading. And bingo, you should get an activation code linked to the Vista lisence.

Unless I'm wrong. Again.

And 2) I think you are using more room by using Boot Camp. Parallels and Fusion both support the idea of expanding disk images. I cannot remember how Parallels does it, but Fusion defaults to a disk image that is smaller than what you specify. It will expand the virtual disk as needed up to the maximum. Thus, you will use less disk space. On the down side, this does cause a performance hit (slight) and you would loose the ability to dual boot.

Of course, on a mac pro, you have disk space to burn. On my 160GB macbook pro (where my Windows 2003 images are for training) I need the space.

I do not understand why you were installing it into Boot Camp. Once you virtualise, you're going to need the VM Drivers anyway. So what advantage does running from a partition give you? Am I missing something here?

Also, I thought that a Vista license could be used to activate a XP install. Maybe then you can ditch Vista? Again… could be wrong.
